Glazed chicken drumsticks with sweet potato

    oranges, grated rind
  • 300
    fresh orange juice
  • 4
    cloves garlic, crushed

    soy sauce

    sunflower oil
  • 12
    chicken drumsticks
  • 4
    sweet potatoes, peeled


Mix together orange rind, juice, garlic, honey, soy sauce and oil.
Place drumsticks in a greased ovenproof dish.
Pour three quarters of the sauce over the drumsticks and turn to coat well.
Cover dish with aluminium foil. Slice sweet potatoes into 2 cm thick pieces.
Lay them on a greased baking tray. Brush with remaining sauce.
Bake chicken and potatoes in a preheated 180 ºC oven for 30 minutes.
Turn over potato slices and brush with sauce halfway through cooking.
Remove aluminium foil from the chicken and continue cooking for 15 minutes or until the chicken is cooked through. Remove potatoes from the oven as soon as they are tender.
Allow chicken and potatoes to cool.
Arrange potato slices and chicken pieces on a platter and drizzle with any remaining sauce.
Refrigerate until ready to serve.
