Glazed chicken breasts

  • 1
    chicken breasts
  • salt and freshly ground black pepper
  • 250
  • 125
    smooth apricot jam
  • 1
    packet brown onion soup powder


Arrange the chicken breasts in a shallow microwaveproof dish, skin side facing up and the thicker parts facing outward. Season well with salt and pepper, cover with paper towelling and microwave for 8 minutes on 100 per cent power. Drain the liquid which forms in the bottom of the dish, if desired. Turn the chicken breasts skin side facing downward, but ensure that the thicker parts face outward. Mix the remaining ingredients well. (Heat slightly to melt the apricot jam and to ensure that it blends thoroughly with the other ingredients). Pour the sauce over the chicken breasts and microwave for 8 minutes uncovered, on 100 per cent power. Turn the chicken breasts once more and microwave for another 6 minutes, uncovered on 100 per cent power. Baste regularly with the sauce. Leave the chicken breasts to stand for a few minutes before serving. Serve hot with rice or mashed potato.
