Ingredients (15)

625.00 ml flour — cake
125.00 ml sugar
7.00 ml Bicarbonate of soda
3.00 ml salt
6.00 ml cinnamon — ground
5.00 ml fresh ginger
2.00 ml cloves — ground
1.00 ml nutmeg — ground
125.00 g butter
250.00 ml water
190.00 ml molasses — or golden syrup
1.00 eggs — extra-large
ORANGE SAUCE
65.00 ml orange juice — fresh
5.00 ml orange — zest only
15.00 ml Goldcrest Pure Honey

Method:

Preheat the oven to 180 ºC and spray a medium-sized loaf tin with non-stick spray.
Sift the flour, sugar, bicarbonate of soda, salt and spices together and rub in the butter. Whisk the water, molasses and egg together and add to the flour. Mix well. Turn the batter into the prepared loaf tin and bake for about 45-55 minutes until done.
Meanwhile prepare the sauce. Mix all the ingredients together and heat slightly. Pour the hot sauce over the loaf and leave to cool in the loaf tin.
Makes 1 medium-sized gingerbread.
