Ingredients (11)

160.00 ml butter — cubed, at room temperature
125.00 ml sugar
65.00 ml treacle — or syrup
2.00 eggs
500.00 ml flour — cake
65.00 ml flour — self-raising
15.00 ml ginger — ground
10.00 ml cinnamon — ground
3.00 ml cloves — ground
3.00 ml nutmeg — ground
5.00 ml Bicarbonate of soda

Method:

1. Preheat oven to 180 ºC, lightly grease 2 baking trays.

2. Beat butter and sugar until light and creamy, beat in the treacle (you can also use golden syrup) and eggs.

3. Sift together the flours, spices and bicarbonate of soda, and fold into creamed mixture.

4. Turn out onto a lightly floured surface and knead until smooth. Cover with plastic wrap and chill far 10 minutes.

5. Divide the dough in half and roll out between 2 sheets of lightly floured baking paper to a 4 mm thickness. Lay on the trays and chill for 15 minutes until just firm.

6. Cut out the dough using a 7 cm gingerbread man cutter. Lay on the trays and bake for 10 minutes. Leave for 5 minutes, then cool on a wire rack.

7. Pipe butter icing on edges of gingerbread men. Leave to set before arranging on a plate or packing into cellophane gift bags with colourful sweets for an exra bit of fun.
