Ginger schnitzel

  • 2
    large green apples, skinned, cored and sliced
  • 30
    lemon juice
  • 6
    slices leg of pork
  • salt and black pepper
  • cake flour
  • 2
    eggs, whisked
  • 250
    crushed ginger biscuits
  • oil for frying


Boil the apples and lemon juice until soft and purée. Flatten the pork slices slightly with the palm of your hand and season to taste with salt and black pepper. Dip the meat slices into the apple purée, then in the cake flour, followed by the whisked egg and finally the biscuit crumbs. Chill for about half an hour before frying in shallow oil until golden brown and done. Drain on paper towelling. Serves 6.
