Ingredients (9)

250.00 g butter
500.00 g flour — cake
15.00 ml Bicarbonate of soda
30.00 ml milk
100.00 g sugar
20.00 ml ginger — ground
1.00 eggs — large
500.00 g honey
ginger — crystallised

Method:

Preheat oven to 180 ºC.
Rub the butter into the flour. Mix the bicarb and milk together.
Add all remaining ingredients, making a dough with the honey.
Allow to stand overnight.
Knead thoroughly next morning.
Shape into round balls like large marbles.
Place on a greased baking tray.
Make a dent in the middle of each one and place a piece of ginger into each dent.
Bake in preheated oven for 10 to 15 minutes.
