Ingredients (9)

525.00 ml water
150.00 g sugar
1.00 ml salt
5.00 ml ginger — ground
120.00 g butter
160.00 g jam — smooth, apricot
10.00 ml Bicarbonate of soda
180.00 g flour — cake
1.00 ml salt

Method:

Heat the water, sugar, salt and ginger together in a large saucepan on the stove. Stir continuously until all the sugar has dissolved and then bring the mixture to the boil. Melt the butter in another saucepan and add the jam and bicarbonate of soda. Mix well. Add the cake flour and salt and stir until the dough no longer sticks to the sides of the saucepan. Drop teaspoonfuls of the dough into the boiling syrup. Cover the saucepan and simmer the dumplings for about 10 minutes until done.
Serve with custard, cream or ice cream.
Serves 6-8.
