45.00 ml golden syrup
120.00 ml margarine
105.00 ml castor sugar
300.00 ml flour — plain
2.00 ml salt
10.00 ml ginger — ground
5.00 ml Baking powder
5.00 ml Bicarbonate of soda
15.00 ml milk

Method:

Place golden syrup, margarine and sugar in a saucepan. Stir over a low heat until margarine has melted, then remove from heat.
Sift flour, salt, ginger, baking powder and bicarbonate of soda together into a bowl. Add melted mixture and milk and mix well. Leave to cool.
When cold, divide mixture into quarters and form each piece into a roll about 15 cm long.
Wrap in greaseproof paper or foil and chill in refrigerator overnight.
To bake, cut rolls into 0.5 cm slices and place on lightly greased baking sheets, allowing room to spread.
Bake in a moderate oven at 180 ºC until golden brown, about 12 minutes.
Leave to cool on baking sheets for a few minutes, then lift on to wire racks and cool completely.
