Ingredients (5)

4 handful ice — cubes
5 cm fresh ginger — thinly sliced
1 handful fresh mint — chopped
1 cup brandy — optional
2 l ginger beer — PnP

Method:

 Place a few handfuls of ice into a large jar or jug. Add ginger, mint leaves and brandy and stir well.
 
Top up with ginger beer and serve with a ladle.
