Ingredients (7)

5.00 Litres water
10.00 g Cream of tartar
10.00 g Tartaric acid
30.00 ml ginger — ground
500.00 ml brown sugar
250.00 ml raisins
2.00 oranges — sliced

Method:

Bring 2 litres of water to the boil and add sugar, stirring until sugar dissolves.
Add ginger and cook for 30 minutes.
Remove from heat and leave to cool.
Stir in cream of tartar and tartaric acid.
Add the remaining water, raisins and slices of orange. Cover with a damp muslin cloth and leave for 24 hours to mature.
The ginger beer will be ready to drink after a day or two.
Strain the mixture and leave in a cool place for two days before serving.
