Ginger and date baked apples

  • 4
    green apples, cored
  • 50
    dates, chopped
  • 100
    walnuts, chopped
  • 4
    pieces preserved ginger, chopped
  • 125
    syrup from preserved ginger


Preheat oven to 180 ºC. Using a sharp knife, cut skin of apple around fattest part of its circumference. Place apples in a baking dish. Fill apple cavities tightly with dates, nuts and ginger, placing any extra filling around apples, then drizzle with syrup. Bake for 30 to 40 minutes or until soft. Serve hot with custard or ice cream.
