Garlicky tomatoes with ricotta and rocket on multigrain toast

    olive oil
  • 15
    crushed garlic
  • Salt and milled pepper
  • 4
    plum tomatoes, quartered lengthwise
  • 125
    ricotta cheese
  • 3
    grated lemon peel
  • 4
    slices multigrain bread, toasted
  • 180
    fresh rocket, coarsely chopped


1. Preheat grill. Whisk olive oil, crushed garlic, salt and pepper in a medium bowl.
2. Add tomatoes and toss to coat.
3. Place tomatoes, cut side up, on a baking sheet and grill for about 5 minutes, until soft and beginning to brown.
4. Meanwhile stir ricotta and lemon peel together and season with salt and pepper.
Spoon this mixture onto toast and top with rocket.
Halve toasts and arrange roasted tomatoes on top.
