3.00 aubergines — medium
125.00 ml fresh chillies — 573
3.00 garlic — cloves, crushed
30.00 ml vinegar — balsamic
salt and freshly ground black pepper
1.00 red onion — chopped
45.00 ml fresh parsley — chopped

Method:

Slice brinjals lengthways into medium-thick slices.
Place slices on an oiled baking sheet. Mix oil, garlic, vinegar and seasoning and brush lightly over brinjal slices.
Place under a preheated grill, second shelf down, and grill until golden, about 5 minutes.
Turn brinjal slices, brush with oil mixture and grill until golden and tender when pierced with a fork. Cover with foil and set aside.
Stir onion and parsley into remaining basting mixture (you may need to add a little extra oil and vinegar) and pour over brinjal slices.
Season and serve at room temperature.
