Garlicky grilled brinjals

  • 3
    medium aubergines
  • 125
    olive oil
  • 3
    cloves garlic, crushed
  • 30
    balsamic vinegar
  • salt and milled pepper
  • 1
    medium red onion, chopped
  • 45
    chopped parsley


Slice brinjals lengthways into medium-thick slices. Place slices on an oiled baking sheet. Mix oil, garlic, vinegar and seasoning and brush lightly over brinjal slices. Place under a preheated grill, second shelf down, and grill until golden, about 5 minutes. Turn brinjal slices, brush with oil mixture and grill until golden and tender when pierced with a fork. Cover with foil and set aside. Stir onion and parsley into remaining basting mixture (you may need to add a little extra oil and vinegar) and pour over brinjal slices. Season and serve at room temperature.
