Garlic chicken

  • 12
    chicken breasts, deboned and cubed
  • salt and freshly ground black pepper
  • about 150 g margarine or butter
  • 15
    garlic cloves, crushed
  • 5
    dried origanum or thyme
  • 5
    dried mixed herbs
  • 190
    brown vinegar


Heat a little oil in a heavy-based pot. Season the chicken cubes to taste with salt and pepper. Fry the chicken cubes a few at a time until golden brown. Remove and set aside. Pour off the excess oil and melt the margarine or butter. Add the garlic and stir-fry for a few minutes over medium heat without letting the garlic change colour. Add the chicken and herbs and season with more salt and pepper if preferred. Cover and simmer for a few minutes. Add the vinegar just before serving and heat until the flavours are well mixed. Serve with rice, pasta or salad. Serves 6-8.
