  • 4
    sirloin steaks (about 200g each)
  • olive oil
  • salt and freshly ground black pepper
  • 150
  • 3
    garlic cloves, chopped
  • 6
    sprigs thyme
  • 1
    packet mangetout, blanched
  • 100
    baby spinach leaves
  • 1
    round feta cheese, crumbled

Brush the steaks with olive oil and season well with salt and pepper. Heat a griddle pan until very hot and fry the steaks over high heat until cooked to the desired degree of doneness. Set aside to rest, then cut into thin slices.

Melt the butter in a separate frying pan and fry the garlic and thyme for a minute over low heat or until the garlic is transparent. Divide between the steaks by pouring a little over each one, or serve it separately in a jug.

In a bowl, mix the mangetout, baby spinach and feta cheese to make the salad. Serve the steaks immediately with the salad and mashed potatoes or oven-baked chips.
