Garlic and herb rouille

  • 2
    cloves garlic, crushed
  • pinch of salt
  • 2
    slices crustless white bread
  • 0.50
    red pepper, chopped
  • 1
    chilli, deseeded
  • 50
    fresh herbs such as basil, coriander, parsley or lemon thyme
  • 250
    olive oil
  • 5
    lemon or lime zest


Place all ingredients except the oil and zest in a blender and blend until smooth.
While the motor is running, add the olive oil in a thin stream and blend until thick and smooth.
Stir in the lemon or lime zest and chill until ready to serve.
Makes about 350 ml
