Start your week off with this quick and fresh salad with a spicy red chilli and coriander dressing.

Ingredients (13)

400.00 g salad greens — mixed
30.00 g rocket
90.00 g baby corn — halved
60.00 g mangetout
0.50 cucumber — halved, sliced
1.00 avocado
250.00 g cottage cheese — chunky
3.00 carrots — julienned
1.00 red pepper — finely sliced
DRESSING
45.00 ml fresh chillies — 573
30.00 ml vinegar — balsamic
2.00 red chilli — sliced
30.00 g fresh coriander — finely chopped

Method:

Arrange the salad leaves, rocket, corn, mangetouts, cucumber and avocado on a platter.
Spoon the cottage cheese onto the salad greens.
Top with the carrots and red pepper, then drizzle with dressing.
To make the dressing, whisk together all the ingredients.
Serve with sliced, toasted French loaf.
