Gammon steaks with apple and cider

Ingredients (10)

0.00 rice — lower GI
0.00 gammon — or kassler chops or steak
0.00 leeks — sliced
0.00 stock powder — vegetable
0.00 salad dressing — honey and mustard, optional
0.00 french mustard
0.00 wholegrain mustard
0.00 cider
0.00 apples — tinned, chopped
0.00 cream — reduced fat

Method:

1.Cook the rice in boiling water until just tender. Do not add salt.
2.Spray a large non-stick frying pan with non-stick cooking spray and heat until hot.
3.Add the gammon or Kassler and fry on high until browned on both sides. Set aside.
4.Add the leeks (or onion) to the pan without adding fat and stir-fry until golden.
5.Prepare the stock in a cup.
6.In a separate cup, mix the dressing and mustards and add a little of the prepared stock.
7.Add the mustard mixture, the rest of the stock and the cider to the pan and bring to the boil.
8.Return the meat to the pan, cover and simmer for about 5 minutes.
9.Add the apples and cook for another 5 minutes, uncovered.
10.Remove the meat and keep warm.
11.Add the cream to the pan and cook uncovered for 1 to 2 minutes to make the gravy.
12.Serve the meat, gravy and rice with two or three cooked vegetables or two salads.
