Fun dipped strawberry cupcakes

Ingredients (11)

Easy Chocolate Cup Cake Recipe
150 g butter — softened
150 g castor sugar
3 eggs
175 g flour — self-raising
2 Tbs cocoa powder
1 tsp vanilla — essence
Dark chocolate ganache
125 ml cream
250 g dark chocolate — chopped
Dipped Strawberries
12 strawberries
100 g dark chocolate — melted
100 g white chocolate — melted

Method:

Easy Chocolate Cup Cake Recipe
Pre-heat the oven to 180oC
Line a 12 muffin pan, with cup cake papers.
Beat the butter and castor sugar with an electric mixer until light and fluffy.
Beat in the eggs one at a time, once well mixed add the self raising flour, cocoa powder and vanilla essence and mix well.
Divide the mixture evenly between the cake cases.
Bake for 18-20 minutes until risen and firm to touch.
Allow to cool for a few minutes and then transfer to a wire rack.
Allow to cool fully before icing.
 
Dark chocolate ganache
Place the cream in a pot and bring to the boil.
Just as the cream begins to boil remove it from the heat and immediately add the chopped chocolate.
Stir until all the chocolate has melted
Set the mixture aside until it has cooled and thickened.   In order to pipe the ganache the mixture should be thick enough to keep its shape. 
Using a cloth piping bag and a large star nozzle, pipe the mixture onto the top of your cupcakes in a circular motion, starting from the outside of the cake and working your way inwards.  Alternatively, spread the ganache over the cupcake with a flat knife.
Decorate with a dipped strawberry.

Dipped Strawberries

Wash your strawberries and dry them well.
To make a “bride” dip the strawberry into the melted white chocolate, first on one side and then the other to create cleavage.  Set aside on non-stick paper to set.  Finish her off by securing a piece of white ribbon as a veil.
To make a “groom: dip the strawberry in white chocolate all the way up to the stalk.  Set aside to cool.  Then dip the strawberry into the dark chocolate first at an angle in one direction and then in the other direction to make the lapels.  Using a small paintbrush, paint on in dark chocolate the buttons and the bow tie.
