Fruity wheat salad

  • 300
    bulgar wheat
  • 1
    green pepper
  • 2
    fresh peaches
  • 1
  • 6
    spring onions
  • cucumber
  • 80
  • 15
    medium curry powder
  • 40
    fruit chutney
  • zest and juice of orange


Place the bulgar wheat in a large glass bowl and cover with boiling water. Stir and allow to stand for 15 minutes. The wheat will swell and soften. Drain well and press out excess water.
Gently stir in green pepper, peaches, papaya, spring onions and cucumber.
For the dressing, mix together mayonnaise, curry powder, chutney and orange zest and juice. Pour over salad and toss gently so that the dressing is evenly distributed. Allow to stand for half an hour before serving.
