Ingredients (6)

250.00 ml cherries — tinned, red
250.00 ml plums — tinned, whole
250.00 ml peach — tinned, quarters
125.00 ml raspberries — frozen
2.00 Litres ice cream — vanilla
0.00 fresh mint — to garnish

Method:

Drain the cans of cherries, plums and peaches but keep the juice.
Mix the fruit together, and set half a cup and the juice aside for garnish.
Soften the ice cream slightly. Layer the fruit and ice cream in a large bowl: start: with fruit and end with ice cream. Freeze for two hours or until firm.
To unmould, quickly dip the bowl into warm water and turn out onto a platter.
Garnish with fruit, juice and fresh mint.
