Fruity rabbit casserole

    rabbit portions

    apple cider
  • 15
    fresh sage
  • 5
    Dijon mustard
  • 200
    sour cream
  • 1
    apple, peeled, cored and sliced
  • 8
    prunes, soaked in warm water
  • salt and freshly ground black pepper to taste

Heat the butter in a large saucepan and brown the rabbit portions. Add the flour and stir to combine, then add the cider gradually.
Stir until the mixture begins to thicken, then add the sage and mustard.
Transfer the mixture to a greased casserole dish, cover and bake in preheated oven (180 °) for 1 hour.
Remove from the oven and stir in the sour cream, apple, prunes and seasoning.
Cover and return to the oven to bake for a further 20 minutes or until rabbit is tender.
