Fruity macaroons

  • 375
    dessicated coconut
  • 6
    soft eating dried figs, chopped
  • 6
    soft eating dried apricots, chopped
  • 125
    hazelnuts, chopped
  • 125
    castor sugar
  • 1
    egg white


Preheat oven to 160 °C.
Mix together the coconut, fruit, nuts, sugar and enough egg white to bind together.
Using your hands, shape the mixture into balls.
Pop each one into a paper case and place them on a baking tray.
Bake for 15 minutes until just pale gold.
