Ingredients (6)

375.00 ml dessicated coconut
6.00 figs — dried, chopped
6.00 apricots — chopped
125.00 ml hazelnuts — chopped
125.00 ml castor sugar
1.00 eggs — whites only

Method:

Preheat oven to 160 &degC.
Mix together the coconut, fruit, nuts, sugar and enough egg white to bind together.
Using your hands, shape the mixture into balls.
Pop each one into a paper case and place them on a baking tray.
Bake for 15 minutes until just pale gold.
