Ingredients (14)

500.00 ml flour — cake
15.00 ml Baking powder
1.00 ml salt
2.00 eggs — seperated
250.00 ml milk
30.00 ml water
60.00 ml margarine — melted
0.00 topping — TOPPING
60.00 ml butter
75.00 g apricots — dried
2.00 pears — peeled, cored and sliced
1.00 cinnamon — stick
60.00 ml brown sugar
100.00 g raisins

Method:

Sift dry ingredients together.
Mix egg yolks, water, milk and margarine.
Stir into dry ingredients.
Beat egg whites until stiff, then fold into flour and milk mixture.
Drop spoonfuls of batter into a hot, greased frying pan.
When bubbles rise to the surface, turn over and cook on the other side for about 2 minutes.
Drain on kitchen paper.
For topping:
In a saucepan, melt butter and add fruit and cinnamon stick.
Cook gently for 5 minutes, ensuring fruit doesn’t break up.
Add brown sugar and raisins and cook for another 5 to 7 minutes.
Stack crumpets, spoon over topping and serve.
