Fruity apple tart

Ingredients (14)

200 ml sugar
80 g butter
3 eggs
250 ml flour — cake
5 ml Baking powder
2.5 ml salt
60 ml milk
5 ml vanilla — essence
1 x 385 apples — tinned, pie
125 ml mixed dried fruit
2.5 ml mixed spice — ground
10 ml cinnamon — ground
Sauce:
125 ml cream
125 ml sugar

Method:

Pre-heat the oven to 180ºC.

Butter a 23cm pie dish.

Cream the butter and sugar together until creamy.

Add eggs, one by one and beat well after each addition.

Sift the cake flour, baking powder and salt.

Add to the egg mixture, alternating with the milk, mixing after each addition.

Add the vanilla essence and pour into the buttered pie dish.

Spoon the pie apples over the batter and level with a fork.

Sprinkle with the dried fruit, mixed spice and cinnamon.

Bake in the pre-heated oven for approximately one hour.

Heat the sugar and cream in a small sauce pan over low heat and bring to a boil.

Cook for two minutes and pour over the tart as soon as it has been removed from the oven.

Return to the oven and cook for a further 5 minutes.

Serve the tart hot or cold with cream, ice cream or even custard.
