Ingredients (8)

200.00 ml fruitcake mix
70.00 g figs — dried, chopped
100.00 ml brandy — or sherry
1.00 dates — loaf, curmbled
2.00 ml rum — essence
1.00 lemon lemon — zest only
24.00 glacé cherries — red
To Decorate: glacé icing
100.00 edible decorative balls — gold and silver

Method:

Truffles Soak the fruitcake mix and figs overnight in the brandy or sherry. Add the date loaf crumbs, essence and lemon peel to the fruit and mix lightly. Divide the mixture into 24 equal parts and shape into balls around the cherries.

To Decorate Spoon a teaspoonful of the glacé icing on top of each truffle and let it run down the sides. Decorate with the balls.
