Fruity Truffles

    fruitcake mix
  • 70
    dried figs, chopped
  • 100
    brandy or sherry
  • 1
    date loaf, crumbled
  • 2
    rum essence
  • 1
    finely grated peel of 1 lemon
  • 24
    red glacé cherries
  • 50
    To Decorate: glacé icing
  • 100
    gold and silver balls


Truffles Soak the fruitcake mix and figs overnight in the brandy or sherry. Add the date loaf crumbs, essence and lemon peel to the fruit and mix lightly. Divide the mixture into 24 equal parts and shape into balls around the cherries.

To Decorate Spoon a teaspoonful of the glacé icing on top of each truffle and let it run down the sides. Decorate with the balls.
