500.00 ml fruit
1.00 Litres vinegar — white wine
375.00 ml sugar

Method:

Place soft fruit, such as strawberries, raspberries, blueberries and youngberries (washed and drained), in sterilised bottles or jars. Pour over a good white wine vinegar. Cover and allow to stand in a warm window for 2 to 3 days. Taste for fruitiness and, if the flavour is good, strain into a stainless-steel saucepan. Add 125-375 ml sugar, bring to boil and simmer for 10 minutes. Skim, if necessary, and cool. Store in tightly sealed sterilised jars or wine bottles.
