Fruit sushi rolls

  • 425
    short-grain rice
  • 4
    sheets nori
  • 1
    banana, sliced lengthways into long, thin pieces
  • 1
    mango, sliced lengthways into long, thin pieces
  • 1
    sweet melon, sliced into long, thin pieces
  • 1
    avocado, sliced lengthways into long, thin pieces
  • 20
    pieces pickled ginger
  • Soy sauce and wasabi, to serve


Prepare the rice according to packet instructions.
Place a sheet of nori on a sheet of cling film.
Add a layer of rice.
Place a piece of each fruit and a few pieces of ginger on the left-hand side of the nori.
Roll up the nori, carefully pulling away the cling film as you go.
Repeat the process for the other nori sheets.
Wrap each roll in cling film and cut into 2 cm slices, then remove the cling film.
Serve with soy sauce and wasabi to taste.
