Fruit salad with lime syrup

Time 10 minutes plus cooling time

    pitted litchis
  • 30
    castor sugar
  • 2
    limes, rind and juice
  • 1
    mango, peeled and sliced (or 1 can mango slices, drained)
  • 2
    bananas, peeled and sliced
  • 4
    granadillas, pulp

Drain the litchis and reserve the syrup. Heat the syrup in a saucepan along with the castor sugar and lime juice. Bring to the boil and allow to simmer for 5 minutes. Add the lime rind and continue to cook for 1 minute, remove from the heat and allow to cool. Mix the fruit together, drizzle with the cooled syrup and serve.
