Ingredients (13)

50.00 ml butter
110.00 ml brown sugar — soft
1.00 eggs — extra-large, lightly beaten
160.00 ml flour — wholewheat
5.00 ml Baking powder
salt — pinch
80.00 ml sultanas — golden
30.00 ml pecan nuts — or walnuts, chopped
2.00 ml cinnamon — ground
2.00 ml mixed spice — ground
5.00 ml vanilla — essence
1.00 bananas — mashed
45.00 ml yoghurt — plain

Method:

Preheat the oven to 160 ºC and spray a 20 x 10 cm loaf tin with non-stick spray or butter lightly. Cream the butter and brown sugar until light. Add the egg and beat well. Add the remaining ingredients, mix well and turn into the prepared loaf tin. Bake for about 1 1/4 hours or until a testing skewer comes out clean. Serve with butter.
Makes 1 small loaf.
