Ingredients (12)

410.00 g pineapple — cut into chunks
1.00 kiwi fruit
2.00 apples — green, peeled, cored and cubed
2.00 pears — cored, cubed
2.00 oranges — peeled and segmented
1.00 gooseberries
200.00 g strawberries — sliced
30.00 ml fresh mint — chopped
SYRUP
45.00 ml lemon juice
6.00 cardamom — roasted, crushed
4.00 cloves
2.00 cinnamon — stick

Method:

Drain the pineapple and reserve the syrup.
Toss all the fruit together in a large serving bowl.
Stir in the mint, then refrigerate.
SYRUP:
Heat the reserve pineapple syrup in a small saucepan.
Add the lemon juice, cardamom, cloves and cinnamon sticks and bring to the boil.
Reduce the heat and allow to simmer for 5 minutes. Set aside to cool.
Once the syrup is cool, pour over the fruit salad and mix gently.
Set aside in the fridge until ready to serve.
