Fruit and berry salad with spiced glaze

    pineapple chunks

    kiwi fruit, peeled and sliced
  • 2
    green apples, cored and cubed
  • 2
    pears, cored and cubed

    oranges, peeled and segmented

    small punnet gooseberries

    strawberries, sliced

    freshly chopped mint

    lemon juice

    cardamom pods, roasted and crushed

Drain the pineapple and reserve the syrup.
Toss all the fruit together in a large serving bowl.
Stir in the mint, then refrigerate.
Heat the reserve pineapple syrup in a small saucepan.
Add the lemon juice, cardamom, cloves and cinnamon sticks and bring to the boil.
Reduce the heat and allow to simmer for 5 minutes. Set aside to cool.
Once the syrup is cool, pour over the fruit salad and mix gently.
Set aside in the fridge until ready to serve.
