Frozen delight

    wholewheat breadcrumbs

    chopped almonds or peanuts

    large egg, separated
  • 200
    low fat natural yoghurt
  • 100
    Nestlé Ideal Evaporated Milk
  • 10
    grated orange rind
  • 50
    castor sugar

    pineapple, peeled and thinly sliced


Spread the breadcrumbs and nuts on to a baking tray. Place under a grill and toast until golden. Set aside to cool. Beat the egg yolk and stir in the yoghurt, evaporated milk, orange rind, castor sugar and toasted mixture. Beat the egg white until stiff and fold gently into the yoghurt mixture. Pour into a container and freeze until starting to set. Remove from the freezer and beat with an electric beater until smooth, stir in the raisins and freeze until firm. To serve, grill the pineapple slices and use to decorate the servings of frozen dessert.
