Ingredients (10)

250.00 g butter
375.00 ml castor sugar
4.00 eggs — jumbo
20.00 ml oranges — zest only
150.00 ml orange juice
500.00 ml flour — self-raising
butter icing
500.00 ml icing sugar
45.00 ml butter
15.00 ml orange juice

Method:

Preheat oven to 180 ºC.
In a large bowl, cream butter and sugar, then add eggs, 1 at a time, beating well after each addition. Add orange peel, juice and flour. Mix well.
Spoon mixture into 18-20 cupcake cases. Bake for 15 to 20 minutes. Cool, then cover with icing and sugared petals.
BUTTER ICING: Beat ingredients together until smooth.
