Ingredients (11)

250.00 g minced lean pork
250.00 g mince — veal
1.00 onion — large, grated
1.00 eggs — jumbo
salt and freshly ground black pepper
15.00 ml potato flour — or cornflour
30.00 ml breadcrumbs — white, fresh
65.00 ml soda water
65.00 ml milk
45.00 ml fresh chillies — 573
5.00 ml butter

Method:

Mix pork and veal in a bowl. Mix in onion, using a large fork.
Whisk egg and add to meat with seasoning, potato flour and breadcrumbs. Mix in enough soda water and milk to make a dropping consistency. You may need a little more soda water. Wet your hands lightly by dipping them in cold water, then shape frikadeller.
Heat olive oil and butter in a large, non-stick pan and, when hot but not smoking, fry frikadeller on both sides until golden brown, 10 to 15 minutes.
Serve with steamed, shredded cabbage covered with well-seasoned white sauce and sprinkle with freshly grated nutmeg.
An alternative Danish serving method is with potato salad made from waxy boiled potato slices mixed with a homemade crème fraîche dressing and topped with chives.
