Frijoles negros (Black beans)

  • 750 ml black beans, cleaned and soaked overnight
  • 1 large onion, quartered
  • 3 cloves garlic
  • 30 ml dried or 2 sprigs fresh epazote or origanum
  • salt and pepper to taste
  • mild Parmesan or similar cheese and sour cream to serve (optional)


Cover beans with water and bring to the boil.
Add onion, garlic and epazote or origanum with a drizzle of corn oil.
Cover and cook on medium heat for about 3 hours or until beans are tender.
Ensure that there is always sufficient water to cover the bottom of the pot, without making the beans too watery.
Add salt and pepper to taste.
Serve sprinkled with a mild Parmesan or similar cheese and sour cream if desired.
