Ingredients (9)

500.00 g rice — cooked
1.00 onion
10.00 ml turmeric
250.00 g peas — shelled and cooked
45.00 ml fresh coriander — finely chopped
75.00 ml oil
4.00 eggs — lightly beaten
50.00 g parmesan cheese
salt and freshly ground black pepper

Method:

In a wok or a large frying pan heat the oil and cook onion until soft.
Add turmeric and fry for 1 to 2 minutes.
Add rice, peas, and heat through, stirring all the time.
Stir in beaten eggs and cook quickly.
Just before serving, add coriander and Parmesan cheese.
Serve with a mixed salad.
