Fried steak and potatoes (Lomo Saltado)

    medium potatoes, peeled and cubed
  • oil for deep frying

    onion, sliced
  • 3
    cloves garlic, crushed
  • 500
    sirloin or fillet steak, sliced

    red pepper, cubed
  • 1
    chilli, chopped
  • 2
    tomatoes, skinned and chopped

    freshly chopped origanum
  • 15
    freshly chopped parsley
  • boiled rice, to serve


20 minutes
1. Deep fry potato cubes until crisp. Place on paper towel and keep warm. 2. Heat 30 ml oil in a frying pan and sauté onion and garlic for 30 seconds. Add the meat and cook over high heat for 1 to 2 minutes until meat is cooked. Remove from the pan. 3. Add remaining oil to the pan and sauté red pepper and chilli for 1 minute. Add tomatoes, vinegar and herbs and return meat to the pan. Add fried potatoes to the pan and cook, stirring for 30 seconds. Season to taste, then remove from the heat and serve with rice.
