Fried omelette with caramelised soya mushrooms

This Asian inspired omelette is perfect for breakfast, lunch or supper.

Ingredients (8)

250.00 ml sunflower oil
8.00 eggs — beaten
5.00 ml salt and white pepper — to taste
200.00 g mushrooms — sliced
125.00 ml soy sauce
2.00 Tbs sugar
1.00 red chilli — thinly sliced
2.00 spring onions — finely sliced, to serve

Method:

Heat the oil in a frying pan. Season the egg mixture and
pour a ¼ of it into the pan.


Cook until the omelette is just firm and the edges are golden
brown and crisp. Make the other 3 omelettes and keep hot.

Heat
a little sesame oil in a wok, add the mushrooms and stir-fry until
brown.

Remove the mushrooms. Pour the soya sauce into the
wok and add the sugar. Simmer for 5 minutes until slightly
reduced and syrupy. Return the mushrooms to the wok.

Serve
omelettes with mushrooms and fresh chilli and spring onion.
