Fried new potatoes

  • new potatoes
  • salted water to cover
  • garlic
  • olive oil
  • butter
  • salt, pepper and paprika


Brush clean as many new potatoes as desired. Rinse under running water and cook in salted water, being careful not to overcook. Use a testing needle to check that the potatoes are cooked. Immediately remove them from heat, drain and fry in a mixture of a little garlic flavoured olive oil and butter. Season with salt, pepper and paprika.
