Fried chicken

Time 25 minutes plus marinating


  • 1
    piece compressed tamarind pulp, soaked in hot water
  • 2
    onions, finely chopped
  • 4
    garlic cloves, finely chopped
  • 15
    fresh ginger, finely grated
  • 5
    chilli sauce
  • 10
    ground coriander
  • 8
    chicken thighs
  • 45
    vegetable oil


20 minutes
1. Combine drained tamarind juice, onions, garlic, ginger, chilli sauce and coriander. Pour over chicken thighs, cut in half, and leave to marinate for two hours. 2. Heat oil in a wok, or large frying pan over medium heat and fry chicken for about 10 minutes on each side until crisp and brown.
