Fried cheese salad with walnut dressing

    walnuts, roughly chopped

    walnut oil (or use extra virgin olive oil)

    fresh lemon juice
  • 1
    onion, peeled and chopped
  • 2
    cloves garlic, crushed
  • 60
    fresh origanum, chopped
  • salt and coarsely ground black pepper
  • 200
    goat's milk cheese or brie, cut into small wedges
  • 1
    egg, lightly beaten
  • 125
    dried breadcrumbs
  • oil for frying
  • assorted lettuce leaves
  • assorted edible flowers


Blend 50 g of the walnuts, the oil, lemon juice, onion, garlic and origanum in a food processor until smooth, thick and creamy. Season with salt and pepper to taste. Dip the cheese into the egg and then into the breadcrumbs and fry until golden brown. Arrange lettuce leaves in a salad bowl, drizzle on the dressing and add cheese and toss. Sprinkle on the remaining walnuts. Garnish with edible flowers.
