Fried brie in a nutty crust

    Brie, sliced into wedges

    walnuts, finely chopped
  • 80
    pecan nuts, finely chopped
  • 80
    almonds, finely chopped
  • 30
    sesame seeds
  • 2
    extra-large eggs
  • 60
    fresh cream
  • oil for deep frying


Place the Brie wedges in the freezer for about 30 minutes. Mix the finely chopped nuts and sesame seeds. Beat the eggs and cream together and remove the cheese from the freezer. Dip each cheese wedge in the egg mixture and then in the nut mixture, ensuring they are completely coated. Press the nut mixture on to the cheese wedges. Arrange the wedges on a plate and chill for at least 45 minutes until very cold. Meanwhile, in a large saucepan, heat enough oil for deep frying until very hot. Fry the cheese wedges until golden brown all over. Drain on paper towels and serve immediately.
