Fried aged fillet

  • 4 x 200 g pieces of fillet
  • 45 ml mustard seeds
  • freshly ground black pepper
  • extra virgin olive oil


Mix mustard seeds and coarsely ground black pepper and rub on both sides of the steak.
Heat a non-stick pan, and use a very small amount of olive oil to seal steaks well on both sides.
It is important to get a really good colour on the side.
Remove pan and finish the steaks in the oven with the baked potatoes for 10 to 15 minutes, depending on your choice of steak (rare, medium or well done).
Serve with mustard and bourbon sauce.
