Ingredients (8)

SALAD DRESSING
45.00 ml spring onion — finely chopped
30.00 ml vinegar — sherry
15.00 ml Dijon mustard
90.00 ml olive oil — extra virgin
SALAD
2.00 bread — white, sliced, crusts removed
bacon — rashers, rolled up
lettuce
125.00 ml cheese — low fat, cubed

Method:

Combine the spring onion, vinegar and mustard and gradually beat in the oil. Season to taste with salt and black pepper.
Sprinkle the bread cubes with olive oil and grill with the bacon rolls until golden brown and crisp. Cool and mix with the remaining salad ingredients.
Pour the salad dressing over the salad, mix lightly and season. Serve immediately.
