Ingredients (16)

salad greens
2 radishes — finely sliced
1 cucumber — peeled and sliced
cocktail tomatoes — halved
1 spring onions — finely sliced
1 celery stalks — finely sliced
pomegranate — rubies
1/4 pineapple — cored and diced
10 prawns — shelled, grilled
For the dressing:
3 Tbs olive oil — lemon-infused
1 Tbs vinegar — pineapple
lemon — zest and juice
1 tsp sugar
2 Tbs sweet chilli sauce
salt — pinch
fresh chillies — chopped

Method:

Assemble the salad and add the prawns.
Pour over the dressing and serve.

Pineapple and sweet chili salad dressing:
Combine all the dressing ingredients in a bottle and shake well or use your whisk to make the dressing.
