Fresh pasta with olives, tomato and garlic

  • 250
    fresh pasta
  • 15
    olive oil for frying (or more if needed)
  • 1
    fat clove garlic
  • 3
    minced chilli (optional)
  • 3
    large ripe tomatoes
  • pinch sugar
  • 6
    black olives
  • salt and milled pepper
  • 5
    leaves/sprigs fresh basil, parsley, origanum (optional)
  • freshly grated Parmesan cheese for serving


Bring some oil and salt water for pasta to the boil.
Heat olive oil in a pan and gently sauté garlic and chilli for a minute or two.
Add tomatoes, sugar, olives and seasoning and allow to cook until tomatoes are just beginning to 'melt'.
Place pasta in boiling water and cook until done, about three to four minutes.
Add fresh herbs to pasta sauce and adjust seasoning.
Drain pasta, stir in pasta sauce, top with lots of freshly grated Parmesan cheese - voila, an under 10 minute feast!
