Fresh pasta with olives, tomato and garlic

Ingredients (10)

250.00 g pasta — fresh
15.00 ml olive oil
1.00 garlic — large cloves
3.00 ml fresh chillies
3.00 tomatoes — large
0.00 sugar — pinch
6.00 black olives
0.00 salt and freshly ground black pepper
5.00 basil leaves — fresh, parsley, origanum
0.00 parmesan cheese — grated, to serve

Method:

Bring some oil and salt water for pasta to the boil.
Heat olive oil in a pan and gently sauté garlic and chilli for a minute or two.
Add tomatoes, sugar, olives and seasoning and allow to cook until tomatoes are just beginning to ‘melt’.
Place pasta in boiling water and cook until done, about three to four minutes.
Add fresh herbs to pasta sauce and adjust seasoning.
Drain pasta, stir in pasta sauce, top with lots of freshly grated Parmesan cheese – voila, an under 10 minute feast!
