Fresh gnocchi with pesto

  • 500
    fresh gnocchi
  • 125
    fresh basil pesto
  • salt and milled pepper


25 minutes
Cook gnocchi according to instructions.
Drain and while still piping hot, stir in as much pesto as you like.
Spoon into heated bowls and serve immediately.

Cook's notes
If you want to increase the amount of pesto or simply thin it out, place in a small pot, heat and add a couple of spoonfuls of the boiling pasta water to the sauce. (This works for just about any pasta sauce.)

Add sautéed red peppers cut into thin strips, chunks of fresh tomatoes, thin slivers of smoked chicken, sautéed mushrooms, chopped spring onions or rocket leaves.
