Ingredients (10)

400 g pasta
watercress
fresh basil
2 garlic — cloves
60 ml almonds — roasted
100 ml parmesan cheese — grated
lemon — juice only
3 celery stalks — finely chopped
200 g cherry tomatoes — halved
2 chicken breast fillets — smoked, thinly sliced

Method:

Cook the pasta as per instructions on the packet. Meanwhile, purée the watercress, basil, garlic, almonds, parmesan and oil in a blender, to make a thick sauce. Season well with salt and pepper and mix it through the cooked pasta.

Mix the celery, cherry tomatoes and smoked chicken slices and add to the mixture; serve warm.
