French toast with basil

    eggs
  • 125
    ml
    milk
  • 60
    ml
    fresh basil, chopped
  • salt and pepper to taste
  • 4
    slices brown bread
  • olive oil
  • 1
    medium tomato, sliced
  • 150
    g
    mozzarella cheese, sliced
 

Method

12 minutes
 
Mix eggs, milk, chopped basil and seasoning together in a shallow bowl, then dip each slice of bread into the mixture until saturated. Transfer to a large plate.
In a frying pan, heat a little olive oil and fry tomatoes for 3 minutes.
Place mozzarella and tomatoes on two of the bread slices and cover with remaining two slices.
In the same frying pan, add a little extra oil and fry the sandwiches on one side over a low heat for 4 minutes, or until golden-brown.
Turn sandwiches over and fry on the other side, in a little extra oil.
Drain on kitchen paper and serve warm.
