250.00 g butter
200.00 ml castor sugar
1.00 eggs — extra-large
625.00 ml flour — cake
salt — pinch
175.00 g glacé cherries — quartered
orange — zest only

Method:

Preheat the oven to 190ºC (375ºF). Spray a baking sheet with non-stick spray.
Cream the butter, add the castor sugar and beat until light and creamy. Add the egg and beat well.
Sift the cake flour and salt together and add half the flour mixture to the butter mixture. Mix well. Add the cherries, orange rind and remaining flour mixture and mix to form a dough. Shape into a ball and divide in half. Roll each piece of dough into a long roll about 5 cm in diameter and wrap in plastic wrap. Plate in the freezer for about 30-45 minutes or until firm. Cut into 5-mm thick slices and place on the prepared baking sheet.
Bake for 12-15 minutes or until the cookies are golden. Cool slightly on the baking sheet before transferring to a wire rack to cool completely. Store in an airtight container.
Makes 36 cookies.
